Ali Shonak was inspired, from execution to conception, by Tesgüino, a corn beer brewed by the Yuto-Aztec people of Central Mexico. We begun with a grain bill grown entirely locally. Our barley was grown and malted in the Verde Valley by Sinagua Malt. The Organic Ancient Wheat, Organic Corn, were grown by Ramona Farms on the Gila River Indian Reservation. We then took the corn, and in Yuto-Aztec fashion, proceeded with soaking and malting the corn 24 hours a day for nearly a week. We left the corn under a bed of fresh cut Pine Needles from the Mogollon Rim, and in a few days the corn had malted! After sun drying and kilning, we now had an entirely unique combination of grain wholly grown and malted in Arizona.

Sampled from the tap at the brewery. Pours a clear straw yellow with a white head that dissipates to the edges. Aroma has earthy corn and bread with some hay supporting. Flavor has lots of corn with straw supporting and a touch of sweet grain underlying.
