Brewed collectively with the fine fellas of Monnik Beer Co. and Awry Brewing, both in Louisville, creating our collective take on a west coast pilsner. We single decocted this 100% pilsner malt beer to add a light malt complexity, which provides a base for aggressive hopping. In the kettle we used a classic mix of Cascade and Centennial hops. For the dry hop, we blended Mosaic, Centennial, Hallertau Blanc, and Michigan grown Zuper Saaz. The resulting beer has a nose of grapefruit, resin, woody spice, and guava. The first sip hits with a pleasant bitterness that pulls honey sweet malt flavors right off the tongue for a piquant and dry finish.
