This is Deep Cut, a West Coast IPA with a mission: to be loud and precise with its hop expression. We built this beer around the powerful Idaho 7 hop, using it extensively throughout the brewing process. This provides a vibrant mix of citrus, tropical fruit, and berry flavors, all capped off with a subtle, sweet bubblegum note. The dry hop is where things get serious. We started with Chinook from Billy Goat Hop Farms for a classic blast of resinous pine and a sharp herbal kick. Then, we brought in Simcoe from Yakima Chief Hops to amplify the flavor with notes of grapefruit zest, an earthy undertone, and complex stone fruit. A straightforward 2-row malt bill ensures the spotlight stays on the hops, delivering a perfectly dry and clean finish with that signature West Coast bitterness. Cut clean. Drink loud.

Pint can pours with a crystal clear pure gold colored body that supports a white head of foam. The aroma offers up tangelo, grapefruit, a bit of orange marmalade and then a thin hit of melon followed by berry fruitiness. The taste delivers pleasing citrus hoppy depth and citrus hop bitterness. I get largely grapefruit and a few flacks of lime zest followed by more juicy notes of guava flowing into a nice berry fruitiness to midway. This remains crisp and dry with minimal sweetness and it's also really hitting the spot right now. A few more sips later reveals an herbal to woody facet to pine hop bitterness. Nice. Please do this one again.
