Our coveted saison starts off with a traditional saison yeast, giving it aromas of pepper and white fruits and a lingering finish with a hint of floral hops.
To weave some funk into this already tangled tapestry of flavors, we decided to iintroduce Brettanomyces Buxellensis.
This wild yeast strain known as "Brett" has thrown in a pleasant earthy barnyard funk. You will also find a refreshingly dry finish with a soft residual sweetness left behind by the orange blossom honey in this funky and new version of an old Swamp Head classic.

Bottle during RBWG GT. Pours a cloudy orange gold with frothy off white head that lasts. The aroma is strong funk, brett, yeast, oak. Medium body, strong oak, brett, nice funk with lingering dry finish, very good.

Bottle thanks to Homer. Pours clear chosen, small off white head, good lacing. Aroma is light, mineral water, Brett, lemon, pepper, hints of Windex, pears. Medium body.

Bottle sample during RBWG 2015 in Tampa. Clear deep golden color, white head. Nice aroma of peppery and dusty overripe stonefruit. Taste has white pepper, funky apricot, attic corners. Nice.

Bottle 750ml. @ cgarvieuk [ Lets do a chrisO Tasting ], Edinburgh, Scotland. [ As Swamp Head Saison du Swamp with Brettanomyces ].Clear medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is light to moderate malty, wheat, moderate to heavy yeasty, barnyard, leather, funky, apricot. Flavour is moderate to heavy sweet and moderate acidic with a long duration, apricot, fruity, funky, yeasty, fruity tart, light honey, peppery notes. Body is medium, texture is oily, carbonation is soft. [20140315]

Sampled @ Hunahpu Day 2014. Pours hazy yellow color with white head. Aromas of yeast and spices with some brett coming through. Lightly funky flavor with brett, spicy yeast and some fruitiness. Medium body with average carbonation. The brett has dried this one out compared to the regular version. I enjoyed this one slightly better.

Bottle at Craig’s. Pours hazy gold, thin white head. Aromas of brett funk, pineapple. Tastes brings more sourness, not getting the honey. On the thin side too. Interesting.
