We took an 8.2% ABV, 65 IBU Double IPA & introduced maple syrup locally sourced near our brewery in Western New York & moderately toasted French oak chips. Roasted malts bring a deep amber hue that’s matched by drums of maple syrup, which are added to help boost fermentation & provide a clean, earthy component with a slight residual sweetness. Cascade, Centennial & Chinook hops coalesce to create a spicy, floral, citrus & piney aroma. Finally, the beer is aged on oak chips to round out its mouthfeel & provide amazing balance to each sip.

12oz bottle. I always like ST’s Oak Anniversary series, so I was excited to try this one. Filtered copper-brown body. Creamy, steady, off-white head. The maple is probably the dominant characteristic. Not unlike a lot of the other 2x beers in that is is an awkward ABV and style range, sort of approaching an imperial hefty body, but with a more restrained flavor. Pretty solid beer, not really fitting into any style category...certainly not a IIPA.

Keg at WoB Syracuse. Clear amber, large creamy offwhite head, good retention. Aroma of maple, oak, citrus, mild lemon. Taste is pale malt, mint, lemon, oak, pepper, maple. Medium bodied.

Sampled on draft at 3R6P this beer poured a caramel-orange color with a medium sized foamy orange-white head that left a bit of lacing. The aroma was sweetish and piney with faint oak and almost raisin. The flavor was bitter and sweetish with notes of rough pine, citrus, wood and rum. Booziness grows. Long finish. Moderately full bodied. Ok.
