Saison Wet Stone is a single barrel bottling of three year old beer. It was brewed in March 2022 from a grist containing malted wheat, caramelised malted barley, and cane sugar. Large quantities of European and US hops were added during the boil to limit the acidity produced in the spontaneous fermentation.
Three years of fermentation and maturation took place in a large 500 litre butt previously used for cider and originally sherry production. The thicker staves of this larger barrel limit oxygen ingress allowing the saison to remain light and fresh, while developing the refined aromatics that age brings.
The finished beer was dry-hopped with whole leaf Slovenian Celeia before bottle conditioning with solely wild yeast and bacteria to produce fine natural carbonation. The finished beer is hoppy, fresh, aromatic, and spritzy. As with many of our dry-hopped beers, the wild yeast will fairly quickly modify the aromatic hop compounds and we anticipate bottle ageing will bring noticeable funk by the new year, before mellowing into fruitier tones later in 2026.

Bottle via the online shop. Light haze on a glowing gold. Solid foamy lasting white foam. Nose has tangy wheat. Cut oak. Grassy citrus hop. Fair amount of funk. Taste is quite tart and tangy. Some hop leaf bitterness. Drinks well at the 6.5 although the carbonation as it stands is way too high. Tart hoppy finish. I feel like this and the Cherry Reds that have just been released have a way to go before they’re spot on.
