Wine from 25% honey, 75% apples conditioned in barrels and fermented.

Conditioned in our Utopian barrels for up to 4 years. The barreled for 6 months in a Chattanooga Whiskey barrel. Hints of buttery vanilla and coconut from the oak meld with the apple and honey to create a complex flavor experience. The deep, rich apple flavor on the forefront gives way to hints of bourbon and a smooth honey finish.

Bottle from the source. Brilliantly clear deep golden color with some legs. Sweet floral honey, lightly sulfury apple with a hint of vanilla spice and wax on the nose. The apple is up front and center but grudgingly gives up for some sugary honey sweetness. Mild vanilla and a bit of brown sugary lightly oxidized apples and faint oak in the finish. The oak is extremely subtle but this is a really tasty mead.

Draft (yes, draft, can you believe it?) at Meridian Pint. Clear golden color, see pic please. Aroma of floral honey, vanilla, burnt caramel, subtle butter during a distant whiff. Taste is rich honey, vanilla, butterscotch. Delicious. Nice to see a mead always rotating through the taplist here.

pale yellow. Very tree-fruit, stone fruit, mango aroma. Vanilla sweet finish, some ginger, really interesting. would have a lot of this, would go great with a vanilla cake.

Honey aroma. Clear pale yellow, frothy. Honey flavor, semi-sweet, no nuance. Thin body. Surprising lack of complexity for a cyser. The label says there is a greater proportion of cider, but the honey dominated everything. Apples aren’t detected, but may serve as a moderating agent to keep it from being cloying. Enjoyable but ordinary.
