"Five Year Trick" - 7.0% - A 2020 blend of Dabinett & Bisquet, fermented in oak casks, matured as a vintage cider for five years. The result is a smooth and rich cider that shows the benefit of that time. The tannins are soft, the flavour deep, the barrel singing in harmony with the apples. This is a gloriously drinkable dry cider with gentle intensity and a complex character.

20 litre bag in box direct from Ross on Wye and served in Oldmeldrum. It pours clear deep golden with a bubbly head which dissipates. The aroma is quite fresh and bright, zippy and zingy, crunchy apple, apple skin, sherbet, dried apple, oak, must, white grape, hay and mellow barnyard. The taste is firm and dry, but softens and smooths out, dry oak, light tannin, juicy, crunchy apple, apple skin, dried leaves, light leather, must, touch nutty, light pucker, hint of acidity and very restrained alcohol presence (especially given the abv). Finish dries out. Medium body and smooth mouth feel. Classy and very well balanced. Moreish.
