Our Cuvee series is an ongoing project in which we select unique oak barrels from our cellar, each containing Ales that have been aged for a minimum of 1 year. The resulting creation is a blend of these Ales that have been aged with various “Wild Yeasts” as well as several strains of Bacteria, which have imparted distinctly complex flavors and aromas. Drink this beer fresh or age it to develop the flavors. // Batch 004 currently presents notes of apricot, sour apple, barnyard funk, and sourdough bread.
