Barrel-aged Saison + honey + apricots, 6.9%

It all started with our usual base of mixed-fermentation barrel-aged Saison, then it evolved with an addition of local forest honey for its delicious woodsy and earthy notes, and a small maceration of fresh apricots for complexity and fruitiness.
For those of you that got the previous releases, this one is halfway between Guiding Light and Nil Blanc, with great forest honey aromatics and just enough juicy and tart apricot notes with a dry finish.
