John likes gin, but John makes beer. To reconcile these two things, John made a Bee's Knees cocktail inspired honey saison made with gin spices and lemon juice.

Malts: Pils and Flaked Wheat
Hops: Liberty, Santiam, Sorchi Ace
Secret Ingredients: Honey, Lemon Zest, Lemon Juice, Juniper, Coriander, Chamomile, and Rose Hips

Bottle to tulip.
Appearance: pale yellow cardboard color with a two finger white foamy head which dissipated nicely to leave some light lace.
Aroma: a whiff of lemon pulp, honey, coriander, hay, grass, floral tones, wheat and a touch of pepper
Flavor: blends the prior noted aromas together in a sweet to slightly peppery to floral quality; finishes dry, peppery and honey-like
Texture: light to medium bodied, sessionable, some smoothness but also an ample amount of dryness
Overall: it drinks like a saison and as far as I know it's a saison. I'd have this again.

Pour is a hazy yellow with a large white head. Aroma is not so much honey but a big spice. Some coriander and grains of paradise. Flavor is some lemon zest a bit of spice and some wheat malt and maybe even some corn. Not much honey showed up but that also left this more dry than sweet. Nothing is really wowing me with this but at the same time it is a pretty decent spiced ale.

12oz bottle. Attractive hazy orange-tan body. Big, foamy, steady, white head. Capture a nice classic Belgian flavor profile, this bottle is a little old and the hops have taken on more of a faded noble hop feel...which works. Lots of depth and ingredients, but they all work well together, nothing stands out awkwardly. A real solid beer.

12 oz. draft at the Mouse Trap, Chicago. Hazy bright yellow in color, fuller head. Aroma is lemons, honey, and a bold yeast presence. The flavor is very interesting, saison like but different. The lemon is balanced the honey and yeast. It shows a nice zesty finish. I didn't note the ABV and it certainly was not noticed in this brew. Nicely crafted.

$3.70 bottle from Wine Warehouse. Pours hazy golden with a soft white head. Aroma is herbal, lemon zest, dried hay. Flavor is slightly tart lemon, hay, earth, light spice (black pepper perhaps?), grass, yeast. Saison-like. I don't get a ton of honey... maybe just some back end sweetness.

Proletariat, NYC tap: pours carbonated gold with a white head. Aroma is herby, straw, some hops, and honey. Taste is lightly herbal with some not so sweet honey going on. Some bitterness and lemons and stuff.

Bottle - Sweet, medicinal and herbal. Clearish gold with a decent white head. Perfumy, sweet, light medicinal notes and reminiscent of something of my childhood. A medicinal tonic syrup. Neat.

330mL bottle, pours a hazy pale golden blonde with a small white head. Aroma brings out fermented out honey, lemon zest and lemon juice. Flavour is a good mix of honey and lemon zest -- with not too much citric notes, nor sweetness. The two main elements go together really cohesively. Perfumey, floral finish. Pretty solid for what it is, just not overly my thing.

Bottle at Matt’s
Hazy light blond color, small head. Nice aroma, some flowers and vegetables; fresh smell. Dry mouthfeel; rather spicy flavor, with a mix of honey and wax; the bitterness in the final has some chicory trace.
Ok beer, experimental, but that’s all.
