Scratch #188 represents our interpretation of the classic Belgian-style ale – the Saison. This once near-extinct ale was brewed in farmhouses during the winter months and stored until summer, when it was served to the seasonally working farmers. (Hint: “saison” translates to “season” in French.) Keeping with a French theme, we use a strain of French Saison yeast to enhance the mouthfeel, which lends a rich, silky texture and dry, champagne-like finish. The result is a mouthwatering, generously carbonated Saison with a tangy citrus zing, sweet malt backbone, and contrasting peppery spiciness. À la vôtre!

4 oz pour on draft at ChurchKey. Clear golden orange with off-white head. Aromas of funk, light peppery notes, stone fruit, some herbs. Tastes of stone fruit, funk, herbs and spices, yeast. Medium body with a dry finish.

Draft. Hazy golden yellow color, medium white head. Nice aroma of dusty barnyard corners. Taste has dusty and peppery orange peel. Very nice.

On tap at the brewery, this was poured into a tulip.
The appearance was a soft to hazy burnt golden orange color with a slight transparency about it. Stringy carbonation rises at a nice pace. A one finger white foamy head dissipates within about thirty seconds leaving some light stringy lacing.
The smell started off with a light peppery spice leading into a delicate sweet citrus and then bouncing into a sweet malt.
The taste was mainly sweet through a combination of the malts and the citrus. The spice tends to take a backseat and seems only to be there to balance. A dry lingering sweetness runs into the aftertaste ends up having a light balanced sweet to spicy finish.
On the palate, this one sat about a light to medium on the body with a fairly decent sessionability about it. Carbonation felt right and also had a sticky sweetness rolling over my tongue.
Overall, I say this was a pretty good saison that I could have again.
