Nøgne Ø’s only pasteurised product. Formerly known as Yamahai Muroka Junmai-Shu Sake. This Junmai was brewed using a Yamahai shubo, an older and more demanding method of yeast starter, which adds more complex flavours and depth to the Sake. The soft, pure local water provides a clean, clear expanse for bold acidity and umami along with a pleasing balanced aroma. It is Nama chozo which means it has been pasteurized only once just before bottling. This helps to retain typical Nama (un-pasteurized) freshness. Enjoy this Sake slightly chilled. It is very versatile and a great accompaniment to a broad range of cuisines; pairing well with Japanese, Asian fusion, and Western dishes to name a few. Rice type: 100% GINPU. Polishing ratio (seimaibuai) (精米歩合): 68%. Sake Meter Value (nihonshudo) (日本酒度): +8. Bottle size: 350 ml.

From my sake backlog. 350 ml bottle. Clear, pale straw-colored body. Aroma is quite mild, but pleasant. Floral, rice and light fruity. Flavor has a mild fruitiness, slightly spicy and smooth alcoholic with a touch of fruity acidity. The alcohol is surprisingly well hidden. I think I could get used to this type of sake.

Tap at BAF 2017. Looks light light green water. Puke, sour milk, sweet rice, lychee, weird herbs, sweet alcohol. Quite sweet and light bitter. Full bodied. Nah I don't like this much.

Draft at Borefts After Festival, Kaapse '17. Clear light golden with no head. Aroma of rice, pear and notes of toffee. Flavour is above moderate sweet. Medium bodied.

Bottle from Rudat. Very smooth and fragile aroma. Hints of fruity fresh melon. Easy to drink, not much alcohol. Great depth of the aroma, fruit, pears, fresh cut yellow fruit. Great moderate long aftertaste, refreshing and round. Fantastic fragile Sake!

Body: Medium body, no carbonation. Oily mouthfeel.

Bottle at Craigs since he noticed I enjoy sake, I didn’t know any breweries also dabbled in this game. Pours yellowish clear. Nose is light fruit and grass. tastes of grass, coconut, honey dew, slight butter. Thin palate

Bottle at Craig’s. Pours clear pale yellow. Aromas of light pineapple and alcohol. Taste is sake. Not really my thing.

Hvitvinsfarget. Lukter grønne epler, gjær og noe syrlig. Smaker ganske fruktig. Vinøs og har en tørr avslutning. Fin omvisning på Nøgne Ø med tilhørende øl og sake-smaking.

Duft av Pære, gjær og alkohol. Fin klar lys hvitvin farge. Ingen skum. Smak av pære, mango og alkohol.
