Silky, elegant, finely sparkling sake
Made expertly, in the traditional champagne method (second fermentation in the bottle), Pearl is a superb example of a medium-dry sparkling sake. It is made from rice grown on the brewery’s own farm and polished to 50% making this a Junmai Daiginjo – the highest class of sake.
Pearl is also lightly cloudy and makes quite an impression when opened: the bubbles rise and gently mix the sake, turning it from clear to cloudy!
Pearl has a delicate fizz with fine bubbles and an elegant, silky texture. Medium-light bodied with crisp green apple, pear & creamy peach flavours. Enjoy as an aperitif or paired with delicate flavours.
Yamatogawa Shuzoten brewery was founded in 1790 in Kitakata, Fukushima. The region is blessed with optimal sake brewing conditions of excellent quality, soft meltwater from the Lide mountain range and cold winters.

Sample courtesy of Grumbo, cheers Graham! Cloudy pale yellow-white colour, some short-lived bubbles on top and aroma of rice, melon, sherberty. Taste is sweetish, rice, fruity, melon, with some well hidden booze. Medium bodied, light carbonation, drying finish. Nicely drinkable.

9/2/2024. Bottle from The Wasabi Company. Region #450. Japanese region 29/47. Saké - Daiginjo rating #10. Pours slightly clouded pale milky yellow with a few bubbles. Aroma is sweet, flowery, melon, pear, fragrant rice, touch of honey and vanilla. Quite sweet sugary taste, with a milk biscuit edge. Mild bitterness, developing gently. Medium body. Nicely carbonated. This worked well.
