Hyperion is a new series of fruited dessert braggots, or beer/mead hybrids, featuring classic Gravity malt bills paired with Hungarian artisanal honeys and rich, vibrant fruits. Our first entry in the series revolves around tart, juicy blackberries.
A caramel-forward malt base provides the foundation for aromatic local wildflower honey and 400 grams per liter of blackberries. As this is a braggot, there are no hops and very little carbonation involved in this after-dinner sipper.
The wildflower honey’s residual sugar perfectly balances the blackberries’ tartness. The nose is packed with forest berry notes, while a long infusion on toasted mulberry wood adds complex tannins and soft vanilla to the palate. Hyperion drinks like a full-bodied dessert wine with a potent 14% ABV.
