For our first blend we produced three beers that fermented and aged in different Brazilian wood barrels. In the process, one of them aged for three years, while the others aged between one and two years. This is our first blend beer project, but it won’t be the last.
COMPOSITION
A tripple blended beer like our Sour Barley Wine is made with a wide variety of malts and four types of hops, thus achieving an IBU measure of 85. Apart from that, the mixture of three different Brazilian wood barrels is what makes this beer stand out. With a powerful and complex aroma and a strong and acid flavor, this beer will melt your brain.
STYLE
Sour beers are unpredictable, intense and memorable. Depending on the type of recipes blended together, the results can change drastically. But no matter the outcome, when created with talent and passion, this beer style will definitely leave you awestruck.

Keg at the 4th Copenhagen Beer Celebration, Session 4, 02/05/2015. Light black topped with a decent tan swirl. Nose is spice, tarte dark fruit esters, herbal notes, toffee, cocoa rub. Taste comprises liquorice, spice, fruit loaf, tangy fruits, stewed prunes. Full bodied, fine carbonation, semi drying close with a lick of alcohol. Came across more a dark sour more so a barley wine but not a bad sipper.

Draft @ CBC 2015. Pours a dark amber brown color with a small off-white head. Has a fruity malty woody sour tart aroma. Fruity sour tart woody flavor with weak hints of caramel. Has a fruity malty woody sour tart finish.

A black beer with a brown head. The aroma has notes of alcohol and brettanomyces. The flavor is sweet with notes of alcohol and brett, leading to a tart finish.

New Beer Distributors, NYC bottle: pours dark brown with a light tan head. Aroma is lactic acid, tropical fruits, fruitcake, a hefty dosage of malts. Taste is sour and malty and very fruity. Interesting and pretty strange beer. Pretty thick in the body but the alcohol is rather well covered. The wild yeasts and the like are really noticeable and became the dominant flavors deep into the aftertaste. This is a slow sipper and not really my favorite but it gets points for creativity.

Draught@CBC2015. Ambery brown colour with a small off-white head. Aroma is bready malts, some toasted notes, alcohol, ripe fruits and mild tobaccoish and ripe fruity notes. Flavour is similar, but the toasted and tobaccoish notes are more toned down than in the aroma. Bittery and somewhat kind of tart notes in the finish.

CBC. Very dark brown with small beige head. Aroma is malt, caramel, dark fruit and sour. Flavour is malt, caramel, berries, little sour, medium sweet, dark fruit and a little bitter.
