Cabernet Sauvignon barrel-aged quadrupel.

Last year's quadrupel, eighteen months in a freshly emptied cabernet sauvignon barrel. The result is a mature, very woodsy, a little bit of mixed fermentation funk, and a very vinous big beer!

The stash from brethren endureth. A cloudy brown. The unattended bottle gushed all over the kitchen worktop but the beer when poured then had a surprisingly short-lived beige head. Aroma has tart vinous notes and booze over a more earthy, fruit cake and dark fruit layer. Flavourwise it's got an initial sour vinous, which does persist. However a dark doughy and molasses sweetness provides a base. Gets fruity. Light-medium bodied. Slick. Average-fizzy carbonation. Long dry astringent finish. I like.
