Our interpretation of Kaiser’s recipe remains true to the structure of the original, built on local Munich, caramel, and chocolate rye malts from @blueoxmalthouse in Maine. Following Kaiser’s approach, we conducted a traditional boil with New York–grown Fuggle hops from @hopguild and added whole leaf Czech Saaz in the whirlpool. The resulting beer, “Kaiser,” is naturally carbonated through spunding during fermentation and lagered for clarity and refinement.
Pouring a deep mahogany with a fine, persistent foam, Kaiser offers layered aromas and flavors of honey, toasted bread, and fresh biscuits shaped by decoction and specialty malts. A gently nutty, lightly chocolatey finish carries through each sip, while soft woody and floral hop notes provide balance alongside a subtle spice from the chocolate rye. The result is a dark lager of considerable depth and drinkability.

Some light roast, nice raw barley. Pours cooler with decent head bad lacing. Light bitter end. Tap at Kettle and Grain.

Pours a lightly hazy deep gold bordering on copper with a small bubbly white head that dissipates quickly. Bready toasty with honey notes and some light floral hops. They call it a Pre Prohibition Dunkel but its closer to an amber lager than a Munich Dunkel. Pretty tasty though.

16oz can pours a clear, copper brown with a finger of thick white head that faded. Malty, nutty nose, heirloom corn, almond, dried leaves. Flavor is more clear, nice heritage grain, nuts, leafy. Easy drinker.

Pours deep, clear mahogany into a willi. White pancake head with good retention recedes leaving spot lacing. Caramel and cocoa aromas. Medium bodied with sweet molasses and pumpernickel upfront turning to sweet earthy multigrain in the medium length finish.
