We had been wanting to brew a West Coast Pilsner with sage for a while, so when the Theodore Payne Foundation reached out about collaborating with us, it was a perfect fit! They brought in an amazing selection of various aromatic plants native to California, and we landed on using Pitcher Sage and Hummingbird Sage.
This West Coast Pilsner highlights the intense aromatics of pineapple, citrus, mint, and woody/pineyness from Hummingbird Sage and Pitcher Sage. We dry hopped with Nelson Sauvin, Mosaic CRYO and Simcoe CRYO to amplify the unique tropical qualities of these awesome California native plants.
