We love Vietnam and Vietnamese cuisine, so when the opportunity arose to spend time with our friends at 7 Bridges Brewing in Hoi An, we leapt at the chance and brewed a collaborative cucumber and coriander sour, Good Morning Vietnam, for a limited release. When we got back to Hong Kong, the creative juices kept flowing, so we decided to build on those flavours to make a sour inspired by the delicacy and complexity of Vietnamese pho.
