Ale Fermented in Oak
Against Death is a series of blended bitter beers macerated with fruit and botanicals. Blend #3.
The blend is comprised of wheat saison brewed in the fall of 2023 which was aged in barrel and then refermented on 2024 harvest pluots from Collins Family Orchards. After some time it was further rested on flowers, roots, and citrus before being refermented to condition in the bottle.
Bottled 06/05/2025
Conditioned with: Organic cane sugar.
Cellar: In the past these have aged exceptionally well, although usually they have less fruit. I expect this will not even peak until maybe this winter or spring 2026. Best before fall 2028.
