Bulwark signature apple cider is made with freshly pressed Nova Scotia Annapolis Valley apples. Settlers first started growing apple varieties in the Valley in the early 1600s, and our cider’s unique character is a tribute to those 400 years of apple growing tradition. We use five varieties of apples, picked when in prime condition, to give perfect balance: apple blossom aromas, light, fruity flavours, and crisp finish with subtle, sweet undertones. Serve chilled.

330ml bottle from Sterk, Amsterdam. Clear yellow gold colour, short-lived fizzy white foam head and floral fruity apple aroma. Taste is sharp apple, fruity, melon, sweetish, with some apple skin and citric tartness. Medium bodied, soft to medium carbonation, dry fruity finish. Quite drinkable

Keg at Rockbottom. It pours clear pale gold with a tiny bubbly white head m the nose is soft, juicy, sweet apple pie, candied pear and spice. The taste is crisp, bitter-sweet, juicy, cloudy apple juice, pear skin, apple pie, light spice, straw and a touch of acidity. Medium body and fine, prickly carbonation. Good balance and clean, crisp drinkability. Good.

Tasting at Matt’s
Pale color. Nice aroma of apples, flowery, a bit citrusy, light vanilla. Dry mouthfeel, quite lemony, also flowery, with light apple flavor.
Refreshing, nice.

500mL bottle, pours a clear blonde with a small white head. Aroma is quite floral, with low-to-medium sweetness, apple skins, and floral notes. Flavour is along the same lines, with medium sweetness and crisp apple skins. Simple but quite clean. Average carbonation. Well-made, but nothing special.

500 ml bottle. Pours a clear straw color with no head. Aromas of freshly cut apples. Clean crisp flavors of yellow and green apples with a little bit of a meaty aftertaste. Medium carbonation. Quite refreshing.
