Une Saison en Enfer (see: Rimbaud) was conceived and brewed over two years ago by Aaron Huebner. Most of our beers blend American, English, and Belgian influences. This does the same, but following a different path than most of our saison. In that way this beer really helps highlight a clear through-line from beers like Floodland Fred, which show a nod to the Belgian side of the roots of what we do, to beers like Altar and Calling Out to Psychic Death, which show more influence from the American and English brewers whose traditions we have all been steeped in.
Aaron conceived this beer as a take on one of our favorite classic pale ales, and it was then filtered through the Floodland lens. In 2022 we were able to get some Belgian-grown Cascade hops from Forrest Farm in Wallonia thanks to the kind friendship of Joran and Shawn at Halfway Crooks in Atlanta. We brewed a beer with a variety of malted barleys, including our favorite English maris otter and several German malts. It was hopped exclusively with whole flower Belgian-grown Cascade before being fermented with an English yeast strain and an English brettanomyces strain. It aged in neutral oak barrels for about 18 months before being assembled in a tank and then dry hopped with whole flower Yakima-grown Cascade.
The Belgian Cascade in this is distinctly continental, and before aging it showed a more floral character than what we see from our local Cascade. The Yakima Cascade we get is very fruit-forward, with loads of melon and citrus. Being an all-barley beer of a more pale level gravity rather than our normally lower weight and hyper pale saison, this beer has a wonderful malt character. The aging and various rounds of flower hopping lend a great depth of aromatic character to balance the malt and the aging in barrel.
This beer is a real beauty. It is distinct and characterful; simultaneously a classic Floodland beer while also not being quite like anything we've ever released.
Bottling date: 05/15/2025
ABV: 7.48% ABV
Conditioned with: Organic sugar.
Cellar: This beer will age very gracefully. Best by Summer 2030.
