Baucis is Arbànt’s first totally spontaneously fermented beer. During the winter period, the wort is exposed to the outside air overnight in order to collect yeast and bacteria. It is then transferred to oak barrels sourced from local wineries. Here, the beer will ferment over the course of at least 1-2 years. With Baucis, we want to create a spontaneously fermented beer that represents our terroir and our cellar. Expect a unique and natural beer that reflects the ever-changing conditions of our century-old winery.
