Imperial stout with single origin Peruvian cocoa beans.
Beans come from San Martin area, an area recognized for its rich biodiversity and ideal conditions of cultivation. Raised at altitudes between 400 and 1200 m, these beans are the result of a valuable blend of Local Natives, Trinitarios and a touch of Criollo aromatic, providing a high-quality cocoa with a distinct character.
Aromatic profile: citric‑floral flavors, elegant and bright, subtle notes of red fruit, which round off the taste.
Natural complexity due to traditional fermentation for 6–7 days in Tornillo wooden boxes, with daily rotation of the berries, followed by slow drying, 6–8 days, in the sun and then in the shade, in order to preserve the whole fine flavors.
