Mixed-culture saison with spruce tips
We brewed Sprucio in collaboration with @wheelhousebeer. Mitch has been buddies with the gang for nigh on ten years. In fact, if you go back through old posts, you can watch his Wheelhouse hat grow more and more well-loved over the years. They make a mighty fine spruce tip pale ale, so this was a great chance to put our own spin on the collab. If you find yourself up in Prince Rupert, pay them a visit.

355mL can. Pours a slightly hazy yellow-blonde with a white head. Peppery saison yeast, lemon peels, a touch of Brett, and some spruce on the nose. Flavour is similar with a lot of that peppery, lemony saison character, crisp spruce needles, a cracker malt base. This is excellent.

Poured from 355mL can (pkg 26-03-12). Chill hazed blonde gold with small white head. Mild mixed-culture tartness with feint berry-like spruce notes, decent.

355 ml can. Pours gold with full foamy head. Aromas of lemon, coriander, soft forest floor, and wheaty malts. Flavors of fruity lemon, subtle spruce but more forest floor, and wheaty malts. Ok, but nothing really qualifying as spruce.

355mL can, pours a hazy dull golden with a small white head. Nose has a very nice, complex wild yeast character, gentle spruce, leather, hay, and a touch of lemon skins. Flavour has a great, subtle lemony tartness upfront, complex wild yeast, hay, musty leather, and a dry, cerealy, grainy malt base. The brett has eaten everything apparently, including most of the spruce presence. But it’s hard to complain when that yeast character is so satisfying. Excellent.
