Southwest style – not the perfect authentic taco, rather existing dishes enhanced and tailored through the use of Southwestern flavors. Adjunction to augment and layer flavors rather than to flatten is the goal. Blue Agave nectar is added to a two-row pilsner malt bill and fermented with Cal Lager yeast, establishing a core palate of flint and gunpowder with edges lightly dressed with papaya and lime leaf notes. That combination then balanced through additions of Noble hops creating a lager counterpoint for a well crafted Southwestern meal. Drink Carton Canyon because there is no art in a beer that stays out of the way of your food.

On tap at Blend Bar and Bistro. Hazy honey gold color. Small creamy beige head. Great lacing. Soapy, earthy agave aroma. Interesting bittersweet hoppy notes, remiscent of Crayola crayons. Finishes spicy with notes of pepper and Thai Basil. I didn't pickup the flint or gunpowder notes suggested in the brewery description, though there are certainly notes of earthy, leafy, deciduous characteristics. Drink Canyon for the uncertainty that life brings when you are foraging around in The Southwest, not for the wall that will be built by our illustrious POTUS.

At the source: misty light gold with a white head. Aroma is grassy, lemony and bready. Taste is sweet, lightly bitter and a tad spicy. Lingering lager aftertaste. Pretty solid.

Location: Draft at the Brewery, 7/19/14

Aroma: Sweet and malty aroma, grains, some lemon/citrus, and underlying hop notes as well
Appearance: It pours a clear golden color with a small head and light lacing
Flavor: The flavor is similar, sweet malts/grains balanced nicely by citrus and hop bitterness
Palate: The body is fairly light and easy drinking, clean on the mouth, with a dryish finish
Overall Impression: I enjoyed this beer. Crisp, clean, and easy drinking. No major flaws for me. This isn't anything crazy, but it is something I could see hitting the spot in the right situation. (I'd like to apologize for using the word "situation" in a review of a Jersey Shore brewed beer.)

Draft at the source. Clear yellow color, bright white edge head. Aroma of lightly spiced rye bread. Taste is similar. Nice.

From tap at the brewery. Pours clear and golden yellow with a small white head. Aroma is grassy and light citrusy. Light toasted malty, grassy and mild fruity into a crisp hoppy and light bitter finish.
