Sample from jerrycan at Carnivale Brettanomyces 2025, John Versyck blending workshop. Didn't take many notes, just enjoyed good beers and good company. What I do remember: Almost 3 years old. Citris acid, wood, like honey without the sweetness of honey.

A taster shared with Ryan. Appearance: copper like a tea. Aroma: like a black tea with some herbs. Taste: along the same lines, very herbally and funky. Overall: interesting, unique.

25 March 2019. At In de Verzekering tegen de Grote Dorst. Shared with the lovely Anke! 3 years old. Clear orange, no head. Aroma of green apple, wood, straw, barnyard, unripe plum & orange, leather, cheese, lemon. Taste is medium fruity sour, lots of apple, apricot, plum, quite yeasty, hay-like & lemony, restrained vinegar; only light woody bitter with a hint of leather, more funk, cheese & dust. Dry, tart, bit grassy hoppy finish, lingering lemon peel, hay & cheese. Medium body, oily texture, flat carbonation. Nice fruity & funky Lambiek!
