At the Mort Subite café in Brussels, where this brand is obviously cultivated to a high degree, seen the history behind it. Thin, snow white, quickly opening but still fairly stable head - the fact that this even has a head to begin with, reveals that it is not ’home made’ like faro should be in its authentic form. Deep, clear, pretty orange blonde colour. Aroma surprisingly still shows quite some lambic funkiness and complexity; hints of orange, artisanal cider, peach, sherry, dry white wine, wood, wet leather and hay. Soft acidic taste, citrus peel touch, mitigated by candi sugar sweetness as expected, caramelly too, sourish ’drought’ does continue though, paired with somewhat sticky, but not too disturbing ’sugariness’. Not the most authentic faro, that much is clear, but it does retain a certain lambic character more so than most other ’industrial’ bottled faros.

Draught at A La Mort Subite. It pours clear amber with a small beige head. The nose is tangy, caramel, raisin, dried cherry, soft sugar and apple. The taste is sweet-sour, wood, apple, pear, ice tea, tangy and toasted sugars with a dry finish. Mediumish body and fine carbonation. Balance is pretty good actually, not as sweet as I expected. Solid faro.
