Ovila Abbey Quad is heady with aromas of caramel, rich malt, and dark fruit balanced by the spiciness and delicate fruity notes of a traditional Belgian yeast. This complex beer is a collaboration between Sierra Nevada Brewing Co. and the monks of the Abbey of New Clairvaux. It features sugar plums grown on the grounds of the Abbey and harvested by the monks in Vina.

Pour is a dark brown with a small tan head. Aroma is full of dark fruit and sugary esters. Flavor is a definite plum with some dark candi sugar and maybe some fig and dark honey. Pretty sweet drinking now and maybe that will go away after time. Still this is a pretty good quad. Again a bit on the sweet side but plenty of dark fruit and a heavy molasses mouth feel.

Tap at Brouwer’s Cafe, Seattle. Colour is almost black with slightly brownish white head. Aromas and flavours: Massive plums, dark fruits, dryness, some Belgian yeast and malts. Quite exceptional quad with massive dark fruitiness.

This one poured a deep red colour with a minimal, tan coloured head. Scents include wine, rum, light licorice, bubblegum and very light yeast. First swig was quite smooth with low carbonation and flavours of caramel, brandy, Melloids cough drops and licorice. Finish is sweet and syrupy with a warming alcohol flavor. Palate is soooo sweet.

Tap at the Old Toad. Orange-brown, cloudy, with lace. Nose of plums, cinnamon and spice, caramel, apples or mulled cider. A bit too light for a quad, in color and body. More like a big fruity tripel. Good, but has that typical "American attempt to brew a quad" lack.

Rich deep copper coloured body with brown, ruby and a muddy glow all visible. Aroma of pit fruits, caramelised sugars, alcohol and quite a bit of earthy malt noticeable. Medium to Full-bodied; Strong rich earthy malt flavours dominate, along with yeast, light spices and quite a bit of alcohol, all with some pit fruits (plums, naturally) sweetening up the finish. Aftertaste shows a lot of depth with sugars, alcohol and spices all noticeable, but the yeast and pit fruits give it some more depth. Overall, a nice quad, but not comparable in the slightest to the offerings from belgium. I sampled this 37,5 split bottle purchased from Whole Foods in Arlington (Clarendon), Virginia on 09-February-2014 for only US$3,99 sampled at home in Washington on the celebration of my fifth wedding anniversary on 09-August-2014.

22 oz. bottle. Dark crimson pour with ruby highlight. lasting thin ring of head. Thin head with head retention. Aroma is very mild, light yeast and light plum, hints of candy sugar.
Flavor is sweet and juicy. Plum is kind of tuff to find but the raisin and dates are here. Body shows a solid amount of yeast in body with a light berry hint. Secondary toasted sweet bread. The ABV is totally hidden at this point, yet still a mild ABV warming after the sip. Real nice stuff.

375 mL bottle as Abbey Quad. Pours extremely dark red with a very off-white head. Plum, prune, cherry aroma. Dark fruit flavor (plum) with toffee. It’s quite good, but it doesn’t really do anything to stand out beyond that.

Bottle in our appartment in Maui, acquired from Wine Corner Paia, come down brew after the road to Hana! 25/04/14. Dark mahogany brown with reddish hues topped with a good sized light tan head that stays for the show. Nose is rich toffee, yeast esters, banana chews, light spice, dark berry fruit, plummy tones. Taste comprises bitter dark fruits, sweet tones, light booze, more plummy tones, leather armchair, tobacco, spice, dark berry fruits. Full bodied, fine carbonation, lightly warming alcohol in the close. Decent quad, the plums are well evident and along with the alcohol are well integrated, doesn’t get too hot.

Bottle. Pours a clear deep amber with a tan head that dissipates nearly completely. Aroma is full of sweet dark grains, dark fruits, belgian yeast and a hint of sweet plums. Flavor has sweet dark grains, toffee and sweet plums with a bit of a red wine notes.
