Cette inspiration de Lambic est le fruit d’un judicieux assemblage de 3 moûts ensemencés en utilisant des souches de levures sauvages pures et vieillis en fût de chêne entre 6 mois et 2 1/2 ans. Clin d’œil aux produits d’origine ayant évolué dans la vallée de la Senne Bruxelloise, ce langoureux liquide aux reflets jaunes-orangés dégage des arômes acidulés et boisés. Laissez-vous surprendre par son côté agréablement acétique, la douce rondeur du chêne et la complexité des levures sauvages de ce précieux hybride entre la bière, le vin et le champagne.

750mL bottle, sent from yourilevesque (thanks a lot, Youri), pours a cloud bright golden with a small white head. Aroma brings out barnyard funk, apricot-centric stone fruits and oak. Flavour is huge on the apricots and other fresh stone fruits upfront, with low-moderate barnyard funk, and light acidity. Surprisingly complex and fruity. Wouldn't have flinched if I was told it was an apricot lambic. Really lovely.

Hazy yellow Gushed very aggressively. The aroma is intense. It smells very sour, almost medicinal. First taste, very good, then metallic orange and cheese and that continues in the middle and long finish with a little soy sauce copper taste. Very good mouthfeel. Just not sure about this one.

Bottle shared thanks to JulienHuxley. Pours very hazy light golden brown with a thin off white head. Aroma is fecal, slightly sickly, dusty, citrus, cheesy. Flavour is heavy acidic, particularly with the harsh acid burn in the finish. Medium bodied with light carbonation.
