Zenne y Fortificado

This ‘Fortificado’ project is inspired by the craft sherry culture. In 2022; we fortified a two-year-old 3 Fonteinen lambik with locally distilled alcohol to 17.5% and we let it sit ever since on a freshly emptied oloroso barrel. This is the exact method to obtain an oloroso sherry, but we did it with lambic instead of dry white Palomino wine. We aimed for an oxidative maturation as well. Consider this a Zenne y Frontera on steroids and with long ageing potential.
