A collaboration between Sierra Nevada Brewing Co and the monks at the Abbey of New Clairvaux, Ovila Abbey Saison brings the centuries-old monastery brewing tradition to America.

Ovila Abbey Saison is complex and contemplative-but also refreshingly dry and drinkable. With earthy and spicy aromas, this rustic Saison has note of green grass and a faint citrus tang. The body is light and layered with fruit and spice accents and a dry, peppery finish.

A portion of the proceedsfrom this ale go toward the restoration of the historic Santa Maria de Oliva chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery in 1931 and planned to use the stones for a castle even grander than his famous San Simeon. Although Hearst’s plan crumbled, these historic stones will rise again in a California Cistercian abbey.

Bottle. Musty lemon and straw malt aroma. Hazy golden yellow color with giant head. Dry musty lemon and straw malt flavor. Mildly bitter herbal hops finish. Very nice.

Bottle. Cloudy gold with a large but fading white head. Aroma of citrus fruits, bubblegum, spices, orchard flowers. Taste is moderately sweet with light caramel, dough, apricots, tart citrus, white pepper. Finish is quite dry and peppery. Alcohol well hidden. The cleanness of the caramel shines through unfortunately.

Cork came out with quite a pop. Pours hazy amber into a tulip. White head crackles and conglomerates as it slowly recedes. Sweet biscuit, caramel and resin aromas. Dry with sourdough upfront turning to lemon zest before the lasting bitter earth finish.

750ml from Pick’s poured into a tulip. Pours a light orange/amber with about 2 fingers of frothy off white head. Grassy hops and a slight aroma of orange citrus. Taste is medium-light sweet with a slight bitter and spicy aftertaste. Light bodied with a thin and oily texture. Lively carbonation and a long somewhat bitter finish. Overall, this is a very good beer. I liked the Dubble better but this one is still awesome.

750 mL bottle. Pours a lightly hazed golden with a white head. Apple aroma leading into bubble gum and clove yeastiness, banana and hints of brett. Bubble gum, spices, and cloves with biscuit and apples in the flavor, herbal hoppy hints, again a dry brett note. Great saison here.

Pours cloudy dark golden color with big white head. Peppery and spicy aroma with lots of doughy yeast. Sweet fruity flavor with some spiciness, citrus and bready yeast. Slightly hoppy with some earthiness. Medium body with lively carbonation and a slightly dry finish.

Bottle. Pours a deep gold with a big fizzy head that dies to a film in short order. Aromas are saison-y... a spicy edge (pepper, lemongrass, etc.), oranges, honey. Flavor is about the same... but this is not my style of saison. The sour is understated and the malt is kinda heavy and syrupy and the funk is underdeveloped.

Bottle: Poured a hazy golden color ale with large foamy head with good retention and some good lacing. Aroma of sweet malt with some light hoppy notes and not much ester discernable. Taste is also a nice mix between some lightly sweet Belgian style malt with a dry hoppy finish. Lacks a bit of ester and yeast is quite tame. Body is full with good carbonation and no apparent alcohol. Not bad though I was expecting a bit more character from this beer.

Juicy funky aroma of overripe lemon with hints of marshmallow sweetness. Hazy amber, thick yellow head, good retention. Tangy lemon, nicely balanced. Funky, especially in the end. Classic saison, nothing outstanding, but quite well executed.
