750ml bottle pours a hazy, ruby red with one ring of off white head. Nose is tart, herbal with some tomato. Tastes like pizza sauce, oregano, tomato, light lemon, caramel, blood orange. Medium bodied, pizza finish.

Bottle thanks to Julia. Pours dirty brown. Nose of dandelion, grass, figs and brown sugar. Taste of wild flowers, dried apricot, dates, fig and lemon grass.

Bottle at the 5th Annual Epic Beer Tasting in Richmond, VA, November 28, 2010. Pours a hazy amber color with a medium frothy head. Decent head retention and lacing. Fruity aroma with notes of peach, pear and faint caramel. The taste is caramel, peach, pear, other fruit notes, earthy notes and a tart finish. Medium bodied. Nice beer.

750ml bouteille à Churchkey. L’obscurité et le marron ténébreux, bronzer la tête avec le solide qui lace. L’arôme d’abricot, le pruneau, le raisin. Le goût de fruits sombres, aigrir des cerises sombres, les pruneaux, les raisins. Bien sûr, le funkiness caractéristique de Fantôme. Une bière superbe ! Bien fait, Dany.

Bottle from Monument in Concord, CA. Dark amber color with a decent beige head. Interesting complex spice aromas. Something suggests a touch of winter green. Approximately medium body with mild carbonation. Never tasted juniper except in gin, but this seems similar. Maybe a bit like sassafras? It’s a very drinkable ale. Funk is very mild.

Throwdown. Cough drops. Minty and fruit, with eucalyptus and herbals. Finish is strongly herbal. There’s just a touch of caramel underlying everything.

750 ml bottle, mail ordered from Liquor Max in Loveland, Colorado, shared at the csbosox tasting on 3/7/08. Pour is cloudy brown-orange with a nice off white head. Aroma of spruce, all spice, mild black pepper, and almost a medicinal quality. Tons going on in this nose, though not sure it all works together. Taste is pretty medicinal, sharp contrast between the sweetness and spiciness. Cloves are in there as well. The spruce gives this a very piney finish. Interesting, but not sure what to make of it. 75 cL bottle, thanks to Hildigöltur. Pours hazy orange with a white head. Heavy ginger aroma. Flavour is undrinkable. Ginger all over. Presumeably wellcrafted - but me and ginger flavoured beer is a no-match.

Like Provence in summer. One of the best aromas I have ever found in beer. There are abundant wild flowers and prairie grass in the aroma. This aroma is incredibly full and bright, tons of herbal quality and a sweetness as well. Flavor has yeast, coriander, oregano, and more herbal quality with some fruit. A little sweet. Very nice cloudy amber appearance. Why is this not a saison?

Pours deep amber into a tulip. Tan micro head leaves sheet lacing. Carmex (menthol), Gammel Dansk, jagermeister and angostura bitters aromas. Tastes like the aroma -- quick review of the above products show rowanberry, angelica, star aniseed, nutmeg, anise, ginger, laurel, gentian, Seville orange and cinnamon among possible ingredients. Slightly flat. Lasting bitter medicinal finish -- like a powder room soap. Can’t finish the 750 in one sitting - may work in limited quantities as an apertif.
