Dorothy (1921-1994) was our grandfather’s sister, Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this hoppy Farmstead® ale is crafted from New Zealand and American hops, our distinctive yeast blend and water from our well. Dry hopped, unfiltered, and naturally carbonated, this is the ale that I dream to have shared with Dorothy.
New iteration. Farmstead ale brewed with wheat, fermented with Brettanomyces, and hopped with Citra. Reminiscent of Wheat is the New Hops.

Pours hazy yellow with a white head. Aroma has notes of malt, yeast, citrus, grape, hint of funk and brett. Taste is medium sweet and light bitter with a long yeasty, citrus and grape finish. Body is medium, texture is thin to oily, carbonation is soft.

750 ml. sampled @ Maldegem tasting. Thanks to Mathieu87 & PriorL. Bottled on 03/2015. Hazy bright orange, creamy white head. Nose is hoppy with lightly cheesy hops, light hay but also overly yeasty, bread, dough, thick yeast, faint funk buried behind the yeast,… Taste is overly yeasty, bitter cheesy hops, creamy milky body, bread, white pepper bitter, light herbal, white bread,… Body & taste overall far too yeasty for me,…. Okay for such a yeasty beer,… Another Hill Farmstead that I don’t quite understand given the high scores,…

Bottle - Light hay and grassy notes and lemon and notes. Hazy yellow gold with a decent white head. Sweet, lemon, herbal bitterness and a bit of soapy finish. Nice, but I think I like the older version better.

750mL bottle, pours a cloudy yellow with a small white head. Nose brings out dank dry hops, brett and farmhouse yeast. Flavour is along the same lines, with loads of dry hops and funky brett. Fairly tart, dry hopped and oaky. Complex and well-balanced. Superior to the 2014 rendition. Excellent.

Bottle @ home, thanks to michcam8 for sending! Pours a cloudy yellow appearance with a bubbly, white head. The aroma is quite herbal, some funk, lemon, freshly cut grass, and vanilla. Maybe a hint of plastic / band-aid. Pillowy mouth feel. Quite herbal flavor. Moderate light bitterness. Low sweetness. Tons of grass, leaves, and herbal notes. Some tropical fruit, mango, papaya, and some citrus. Finishes cleanly. Not a ton in the aftertaste. Easy chugger. Good beer.

Bottle thanks to Will. Pours a hazy gold with medium frothy white head that lasts. The aroma is strong brett, citra, wheat. Slick mouth, juicy, citrus, light funk, oak, really nice.

750 ml bottle thanks to Eric S. Aroma has a grass, hay and mild Bretty funk. The flavor has the same flavors with a nice lingering bitterness as well as mild lingering funk. The citrus is also here in abundance. Very nice.

Bottle picked up this week @ Hill Farmstead. 75CL split 2 ways at 38F in stemmed HF glasses. I’m also not sure it should be a new entry but it does have a different taste enough that it could be considered so.
A - Very cloudy, bright yellow 3 finger tight white bubbly head. fades to some sticky lacing.
S - Orange peels, pepper, lemon, funky wheat and hay. Citra dry hopping totally having a field day in the aroma.
T - Taste is actually very similar to Wheat is the New Hops (2014 batch @ HFS). Chewy, brett funk is minimal but will grow. Brett B? Sweet oranges, sharp bitterness at the finish with a slight acidity.
M - Thick, chewy, nice mouthfeel.
O - Great re-mix on the 2014 Dorothy. Enjoyed quite a bit.
