“STS” is the 3-letter code for our local Sonoma County airport, the Charles M. Schulz Airport. STS Pils is a classic German-style pilsner but with a Russian River twist because we dry hop this beer with a small amount of European hops. It is straw in color and will often have a slight haze due to the fact that there is a small amount of yeast left in the beer. This beer is hop-forward with a firm malt foundation, strong lager yeast characteristic, and a dry, bitter finish.

A truly great Pilsner is a difficult beer to perfect, as its light crisp flavor profile leaves little room for error. Modern brewing techniques (such as open-top fermentation) and old-world traditions create the distinct qualities in STS Pils.

Tap at the brewpub. Pours clear pale yellow. Really a nice pilsener. Great bitterness, solid balance of dry and still a little sweet. Refreshing. Good.

Bottled 8/29/16, drunk over the course of a few months, September-December 2016, most recently on 12/6/16. Huge thanks to Joenugs for the trade!
Man, have I been dying to try this beer for a long time now....Pours a rich beeswax-golden, clear with a large amount of white head showing moderate retention.
The nose is pretty close to perfection, showing strong white grape, pommelo, fresh cut grass and biscuits loaded with honey. Smells like the best qualities of Nelson Sauvin (mineral, white grape must, red grapeskin) mixed with the best noble hop qualities (fresh cut grass, lavender, almost Brett-like citrics), despite there being no Nelson Sauvin actually present. Clean and with no alcohol.
Crisp, well-attenuated with a tinge of rich maltiness in the form of plentiful honey and light whitebread. Hints of sourdough transition in to more white grape and zesty fresh herbal notes from the hops, as lemon and grass linger on the crisp, tightly carbonated finish. Awesome, awesome stuff, well worth the wait and I can’t wait to have this on draught some day...

510 mL bottle poured at home to my favorite pilsner mug. For some reason, this has always been one of my most anticipated beer from these guys. I fell in love with them after all the big name sours, and always wanted to try their regular beer lineup, beginning with the beer style I feel to be the hardest to make great. Picked this up at the brewery during my visit the other day. I already had plenty of respect for these guys, but the entire experience and all the beer was beyond incredible. Clear pale golden color pour. Bottled on 8/29/2016. Straw grainy aroma that isn’t unique to the style. Cream body. Very refreshing, cool grain flavor. A slightly spicy malt that lingers. Crisp pils, very dry late. Flavorful, very enjoyable pils for sure, and I’m glad a got a couple more of these.

Tap at Capitol Beer in Sacramento, CA. Pours pale gold with a white head. Aroma of mild fruit - a little spice. Med body? Flavor is fruit, pale malt, maybe a touch of grass and spice. Mildly bitter. Touch of earth in the finish. Drinkable but not exciting.
