Bottle 750ml. shared at [ A Day To Sink All Sea Shepards tasting. ], Brussels, Belgium. [ As Cantillon Lambic Chardonnay ].Unclear medium orange yellow color with a small to average, frothy - fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate to heavy yeasty, barnyard, leather, moderate to heavy grapes, apple, apple - grapes - wine - oak, white grapes. Flavor is moderate sweet and light to moderate acidic with a long duration, tart, grapes - apple, funky, barnyard, grapes - wine - white grapes. Body is medium, texture is oily to watery, carbonation is soft. [20160917] 8-3-9-4-17

2014 750mL bottle drunk 10/8/16.
Very carbonated, as these grape lambics seem apt to be. Pale, waxen-yellow gold with a large, off-white head that fades steadily. Good clarity, of course.
Very "clean" nose, not as in "not-flawed" but rather it’s very low on funk, especially for Cantillon. Nectarine, apricot and light minerality from the grape with moderate "tartness" suggested by the nose. I’d say the wine gets the better of the lambic, but it’s certainly not overdone, so I guess this is just a rather mild, easygoing lambic. Which is fine. No alcohol or flaw.
In the mouth, it’s well-carbonated, but with a supple, tannin-rich texture and fineness to the bubbles. Wood, wine and light sweetness redolent of grape must, though that’s not present. Tartness, bordering on a bit of sourness on the finish, but remarkably soft and mild here. Light wateriness to it and all-around pleasant, but would never put this as a Cantillon.

750 ml bottle shared at the original Chez Moeder Lambic’s cellar. Hazy yellow golden color with white to off white head. Yeasty aroma, barnyard, tart citrusy, lemon, grapes - white wine, wood. Light sweet and moderate acidic taste like aroma. Medium oily body with soft carbonation.

Tasted at Vinni,Birri,Ribelli 2015. Pours clear blonde, good white head. Intense lambic scent. Some wine grapes. Nice, full taste. Bit sweet, almost salty. Lambic character. Only very mildly sour, but meanwhile , this is a complex and elegant beer.

Sampled 750 ml. bottle @ “Vini Birre Ribelli 2015”. Bit more than 1 year old at this point if I remember, I let it breathe a little bit as advised. Hazy citrus golden, small white. Nose is intensely mineral, very heavy, going almost into a salty direction, the grapes / must is clearly there, very big fermenting, spoiled character, raw fermenting white grape skins. Taste is hugely mineral, massively so, wine fink, some salty character, spoiled red grapes, spoiled grape skins, wine funk, hay, barnyard,… Bubbly, quite a substantial body. Very unique, I can almost see a wine lover understanding this more than a beer geek. It was a bit too extreme for me at first but I came around to it, very interesting. Jean Van Roy continues his bold quest into uncharted wine territory. He also gave us some interesting explanation about the wine producer & the wine must that he got from him. I am not the right person to relay that here.

First ever beer decanted, on indication by the brewer. Decanting gives white head, fast reduced to rim - stable - over hazy, lightly orangey yellow beer, lively carbonated despite the decantation. Rather warm farmyard and expressly horseblanket aromas, faint lemon and other fruity aromas. Surprisingly mild acidity, lactic acid, fruitacids, lemony. Bit lactic character too, at first. Finish has a near bitterish, peppery spicyness. From the grapes, just an impression of the skins (maybe the tannines from the kernels?). In the back, a hint at maltiness, but warming up, this sweet(ish)ness turns totally to white grape. Very attenuated, spritzy, exhilaratingly refreshing - but it gets more complex warming up! Another excellent Cantillon/wine hybrid. It gets better with every sip. Grand merci aux deux Jeans!!
