Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Bottle from the lcbo. Orange pour, medium white head. Yeasty, fruity, bready, crackery malts. Nice mouth feel, soft carb. Finish is low on the bitterness scale, bready malts, light hop,yeasty and fruity. Basic Belgian ale, but well made.

Bottle at home. Aroma is malt, spicy yeast, ripe fruity notes, herbal notes, bit sugary. Flavour is moderate sweet and light bitter. Body is medium. Okay drinkable Belgian Ale, but not too special.

Отличное Траппиское пиво из Америки. Аромат сока домашнего производства. Вкус фруктовый; Яблочный пирог или сок, немного апельсина и ягод. После глотка чувствуется легкая сухость. При послевкусие имеется легкая горчинка. Не уверен, но я уловил нотки чего то похожего на кориандр.

Bottle 0,33ltr: Cloudy blonde colored brew with an nicely dry bitter taste with hints of fruits, spices and some caramel. Looks like an Leffe Blond becoming North-West Pacific American. Bought this at the abbey of Achel.

Color oro viejo, tirando al ámbar. Bastante turbia, genera una fina capa de espuma densa y muy duradera.
Aroma a levadura belga, con esas notas afrutadas características (plátano sobretodo), algún cítrico y el frescor del lúpulo.
Sabor en la misma línea, con notas a miel, cereal y galleta. Final ligeramente cítrico con un punto amargo.
Carbonatación media y cuerpo medio/aceitoso.
Buena ale trapense, una pena que esté fuera de producción.
