Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Bottle from Cork & Cask. Hazy golden body with a medium white head. Lively carbonation. Good lacing. Aroma of straw, crushed digestive biscuits and apricot. Flavour of banana bread, salted cracker, yeast and pear. Thin body with a watery texture. Light fizz. It’s not particularly complex, but it is very enjoyable.

pours orange/golden with a white head. Aroma of banana, yeast, malts, orange, citrus. Taste likewise, smooth, slick, some biscuit, quite firm co2, medium body, slightly thin texture however tastefull.

Bottle 0.33l at home, Riihimäki. Colour is slightly deep orange with small white head. Aromas and flavours: Ripe fruits, banana, spices, pepper, Belgian yeast and malts. Fruity Belgian ale.

Bottle. Archer Road Beer Stop, Sheffield. Hazy, gingery amber. Film of sticky, off white head. Nose has spicy malts. Esters and sweet yeast. Lots of that mashed up banana thing. Taste has some spicy, fruity sweetness. More sweet yeast. Foamy mouthfeel. Touch of welcome dryness on the close. Not for me.

Cloudy golden, offwhite head. Aroma has malt and fruity yeast. Estery notes. Malty flavour, light yeast and mild spice. Some banana. Short, light finish, slightly thin perhaps.

Cloudy orange golden color with a white layer. Decent intensity in the aroma. Medium + body and a bit to rich carbonation. Malty, herbal, some banana, fruity and some spiced notes. Hmmmm the rich carbonation unfortunately destroys this beer totally. Would probably be quite nice with a proper carbonation.

750 ml bottle shared while camping, 7/3/16. Murky gold, white head. Fruit and yeast, a bit of funk, some bread. Nice flavor profile overall. Good mouthfeel. Good beer.

Cloudy golden color with a white head, good lasting. Aroma has notes of yeast, marzipan and cookies. Flavor is slightly sweet at the beginning, bready notes with belgian yeast hints, light bitterness in the final with smoothy mouthfeel.

Bottle from LDW, Eke. Light hazy orange colour, white foam disappears quickly. Sweet banana, citrussy. Light bitter hoppy finish. Very Belgian profile. Ok, nothing spectacular.

33 cl bottle @ hotel room. A total gusher. Aroma has somewhat ripe fruits and apricot. Also mild spiciness. Flavour has apricot, yeasty notes and ripe fruits. Smooth and easy-going, I like the strong ripe fruit and apricot tones here. Could not tell that this was non-Belgian.
