Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Shared 12 oz. bottle. A gusher of a bottle. Pour is cloudy gold with a lot of suspended particles. White head. Aroma of honey, malt, yeast, spice, and fruits. Taste is similar to nose. Maybe has a bit of clove and faint banana notes as well. A bit disappointing; had higher hopes for this.

330ml bottle at ’t Klooster, Delft - Gusher. Hazy orange body with off-white head. Nose of citrus, stone fruit, floral. Taste is citrus, herbs, light spice, stone fruit and floral. Medium-light body with a dry finish. Expensive for the quality.

Many thanks for this beer to kevnic2008. Bottle from Saveur-Bier. Piana mala ale wysycenie spore. Burza wystrzalu mnie czekala i sporo do posprzątania. Piwo ma zapach startej skorki pomarańczy i mandarynki. Sporo z Tripla w zapachu i smaku. Tresciwe i smaczne, bardzo mętne, kolor ciemno pomarańczowy. W smaku sporo moreli suszonej. Chmielenie lekko wyczuwalne na sposób amerykański oczywiście. Ale owocowość tu gra pierwsze skrzypce. Sadze ze to udany trapista z US

Bottle at home, finally been able to get it somewhat high priced but not over expensive ... golden orange beer, small head. aroma is yeast, banana, fruit. Taste is the same, some bitterness. average beer.

33cl bottle at Drink bar, Tallinn. Pours hazy deep golden to amber with an off-white head. Fruity aroma dominated by Belgian yeast, some mild banana notes, peaches and hints of herbs and toffee. Medium sweet with quite lovely fruity, Belgian flavours and a balanced bitterness. Smooth, tasty and very enjoyable.

Bottle at tasting. Golden color. Aroma of dry yeast, grain and a mild white pepper. Fresh taste of dry grassy yeast, pepper again, grainy malt and some bitters. Tastes like a classic saison, not bad.

Orange to amber colored, hazy, small off white head. Aroma of brewing sugar, spices, bit fruity, Belgian yeast. Taste is medium sweet malt, brewing sugar, some caramel, spicy and less fruity, Belgian yeast, dry finish. Medium bodied, average+ carbonation. Very good but older Trappists have the upper hand.

33 cl bottle, served in stem glass at room temperature (cool, not cold). Pours hazy honey-hued with whitish head, both fast-growing and fast-vanishing. Aroma is mild: honey, toast, caramel, pie, orange, cinnamon and cardamom. Mouthfeel is fizzy, delicate, not mouth-covering. Low-lingering finish with no bitterness.

Golden colour with a light haze and a thin head. The aroma and flavour are very spicy with clove being the dominant one. Hints of nutmeg and perhaps cinnamon linger in the background. Overall it’s light bodied, sweet and spicy. Too spicy for my taste.
