Imperial Milk Stout
8 Maids-a-Milking is the 8th beer in our "12 Days of Christmas" series, and we'd be udderly crazy to release anything but a milk stout. So we made an imperial milk stout to stand up to whatever Old Man Winter throws our way from now through 2019 with the final release of our series. 8 Maids-a-Milking is brewed with lactose, which is commonly referred to as milk sugar. It's the only type of sugar that is unfermentable by yeast, which adds more perceptible creaminess and sweetness to the finished beer. This mouthfeel and sweetness is complemented by robust layers of milk chocolate, subtle spice accents from our house Belgian yeast and roasty, cafe elements indicative of our take on the style. Celebrate the seasons with the best of both worlds: enjoy some now, and lay a few down for up to 4 years to be enjoyed upon the release of 12 Drummers Drumming.

On tap @Luppolo Station (Rome). Nera, densa, impenetrabile, schiuma écru media, discretamente persistente. Al naso lievito belga, pan di spagna imbevuto al rum, liquirizia, frutta secca, uva passa, spezie. In bocca è abboccata, speziata, con chiusura amara e leggermente acidula. Corpo pieno, carbonazione medio-leggera. Splendida!

750mL bottle, pours a deep dark brown / near-black, almost no head. Aroma is definitely somewhat oxidized, with a touch of lactose and cardboardy bready malt. Flavour is off, with tons of lactose and cardboard. I doubt this was great fresh but it's definitely past its prime now.

2016 bottle. Pours black into a tulip. Mocha head with medium retention recedes to hug rim. Hot caramel, bourbon and espresso aromas. Soft with hot caramel, bourbon, oak, hot chocolate and espresso upfront turning to pumpernickel sourdough in the lasting finish. Slightly sour, but warming and delicious...

Bottle 750ml @ My parent's place
Pours black with a tan head. Aroma has notes of roasted malt, chocolate, lactose, dried fruits and alcohol. Taste is medium to heavy sweet and medium bitter with a long warm, roasted, chocolate, yeasty, dried fruity finish. Body is full, texture is oily, carbonation is soft.

750 mL bottle, original 2015 release. Pours black, with a big, foamy, beige head. The aroma is dates, macadamia, heavy cream, dark chocolate, and light soy. Very sweet and yeasty, with a touch of sour. Quality stout, if a little old.

750ml bottle, aged 4 years. Really has a true to style chocolate covered dark fruit tone, reminiscent of Caribbean Stouts. Thick, luscious chocolate tone fades into alcohol soaked molasses. The Belgian yeast takes it in even funkier direction, but is restrained and true to style as well, at times reminiscent of a dark Belgian Strong Ale. Lactose smooths is out, but this is still quite a whopper. Really good.
