When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

On tap at the Marriott Marquis. Cloudy gold with no head. Aroma is lemon, straw, yeast. Initial taste is lemon and Belgian yeast. Fades, to tart lemon, straw. Body is a touch thin.

Draft at birdsall in peekskill. Off colored yellow small white head. Funky yeast and fruity apples. Ok.

Old rating from 2016 - 330ml bottle brought back from NYC. Pours bright amber with a white foamy head. Aromas & tastes of rich berries, little tart, apples, banana, citrus, spices & dry hops. Medium body. Dry crisp finish

Hazy yellow. Dry. Which is great, and hippy initially some soap in the first sip but that is quickly gone replaced by hay and flowers. Good.

Boisterous saison, full of clove and cut grass and floral notes, underlined by lemon and yeast. Finishes with a mild dry streak and lingering hints of vanilla and hay. Very nice.

Canned, 473 ml at the brewery. Cloudy yellow with medium white head. Yeasty, somewhat spicy, some fruity lemon notes. Some hoppiness present as well. Medium carbonation and body.
