When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Apricot, lemon zest, coriander nose. Cloudy golden, thick head. Lemony, but dry. Coriander accents. Mild peppery finish. Light body. Another beer from this brewery that tastes more like a wibier. I think they must all be wits than merely have some qualities of the labeled style. Good though.

Pour is a milky blonde with a large white head. Aroma is herbal and a bit spicy with some fresh tropical fruit. Flavor is mango with some mild funk. Finish is a bit like some sweet whipped cream. The beer gives a very soft mouthfeel so that may contribute to the whipped cream finish. Pretty good beer here. Very fruity with some farmhouse aspects shining through.

12 ounce bottle from Wine Warehouse Charlottesville. Pours a hazy yellow with a thin frothy white head. Decent head retention. Aroma of earthy, nutty notes, bready malts, spicy and herbal hops. Pretty dry. The taste is spicy hops, pale bready malt, spice, yeast, bubblegum. Pretty dry, medium bodied, strong lingering spice. Solid.

Bottle from Elizabeth Station, Bellingham
Cloudy blond color; medium sized head. Strange aroma, original; bready, flowery, crackery, very deep; there is elderflower and passion fruit. Dry mouthfeel; nice spicy flavor, coriander, citrus peel (tangerine and cedar); a bit astringent in the end.

12 oz. bottle, pours a cloudy pale golden with a small white head. Aroma is on the hoppier side, with citra hops, dry grains, more dry hops, and farmhouse yeast. Flavour is also on the hoppier side, with delicious dry juicy citra hops, a medium Belgian yeast component, and a dry biscuity malt backing. Fantastic balance, with great hopping and complex yeasts. Excellent beer.

12 oz. bottle purchased at Winooski Beverage Warehouse, VT. Color is an unfiltered straw color. Aroma is peppery yeast and mild citrus. Kind of herbal.
The flavor leans on the herbal side with citrus a secondary note. The body is on the fuller side with some chewy yeast. The texture is really dry with a dusty straw and dusty wheat finish. Overall you can certainly find more complex brews in this style but this is a nice example of more classic rendition.

Draught @ CBC 2014 [ Blue Session ]. - Copenhagen Beer Celebration 2014, Sparta Hallen, Gunnar Nu Hansens Plads 11, 2100 Copenhagen, Denmark [ As Off Color Apex Predator ].Clear medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, fruity, tropical fruit, light to moderate hoppy - yeasty. Flavour is moderate to light light heavy sweet and light acidic with a long duration, tart tropical fruit - juicy tangerine, fresh. Body is medium, texture is watery, carbonation is soft. [20140502]

Tap at CBC 2014. Golden in the glass, small head. Mild malty-sourish aroma. Starts mild, quite malty, more and more wheaty-dry. Finish dry-malty. A bit boring.

On tap @ Copenhagen Beer Celebration 2014. A nice bright golden looking slightly clouded one with a good looking white medium sized really lacing white head. Citrus on the nose. Also tones of lemons, lots of oranges, wheat sweetness and a loud grassy kick. Not bad at all, fresh. It's mild oily in the mouth and just above average on the bubbles. Lots grapefruit citrus in the taste. Also, it's really astringent with a month drying sensation after a while. Hay and lemons. Well, I really enjoyed the aroma but to taste did not completely match it. Still... 02.05.2014

Draft at Churchkey. Clear golden color, white head. Aroma of funky lemon. Taste is bitter lemon on a background of pepper and hay.
