This beer is part of a project we have been working on at the brewery for a few years now. We wanted to create a modern sour ale aged in barrels, with the same complexity and depth of flavour which our favourite sours from the USA offer. This beer started life as a simple blonde ale with low bitterness and was fermented with our house yeast. We then aged this in Burgundy barrels with the fruit for well over a year.

Adding cultures of Brettanomyces, Pedicoccus and Lactobacillus at set points let us sour the beer gradually over many months and give layers of flavour that can only be developed over time. The fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast character to come through. The resulting beer is a clean, zingy and intense blend of fruity tartness with intimations of crisp Sauvignon Blanc grapes.

Superficial sample from Gunnfryds ticker party. Slightly unclear golden body under a small off-white head. Aroma is delicate and slightly funky with pale malt, berries and hint of wood. Taste is balancing sweet malt with acidity, nice, gentle funk, mild wood and pleasant bitterness. Balanced body with smooth aftertaste. Nice and very refreshing.

Bottle. A hazy pale golden colored beer with more or less no head. Sour fruity aroma with gooseberry, some melon and grass, hints of pear and a light doughy hint. It's tart and acidic in the mouth, softly carbonated, medium bodied. Yoghurt, dough, lemon, some melon and grass in the flavor. Gooseberry hints and grass hints in the flavor. Short finish. Not very interesting for me this one. 230422

2018 bottle, bb August. Not far off clear gold with a white head that's very soon at the rim. Aroma of lemon, bracken, gooseberries, pears, bread. Moderate but deep sourness but texture is soft, almost creamy. Fruity with gooseberries (which I love), some more autumnal flavours including pear, peaches that came too late to ripen. Bracken and some peppery oak at the end. Very good.

375ml bottle sophiesbeerstore.co.uk. Misty golden yellow, thin white head. Aroma has nice wild floral fruity lambic. Gentle carbonation, surprisingly dry on the palate, light fruity presence, not necessarily jumping out as gooseberry unfortunately, more of a gueuze-like fruitiness, some white wine, citrus with a distant bitter prickle. Could do with being a bit more vibrant and flavoursome.. it's a pleasant sipper, but comes across a little too dry and nonchalant.
