We don’t have many rules at Carton Brewing and those we have we made up for ourselves. In general though, we strive for drinkability through balance and harmonization of flavors. But even self-imposed rules are meant to be broken. With Epitome we decided to embrace the teenage metalhead in each of us and get discordant with a seriously hoppy, high gravity, black ale. The only notions accepted were to make it bigger, bolder, hotter & faster. A Beast. The ABV had to push past 10, the black had to be “none more,” and the hops had to be American and piled on like a double bass drum kicking faster and harder. Drink Epitome because things worth doing are worth over doing.

Draft at Fool's Gold, 12/5/15. Pours basically black with a thin ring of head and light, spotty lace. Aroma has a lot of longer with lighter roasty. Roast is much strong in the flavor. Gets almost burnt on the close. Fairly full bodied. Really nice take on making something somewhat like a Black IPA, but also not really a Black IPA. Another hit from Carton.

16 oz can shared by Gilles at the Annapolis tasting. Dark brownish black with beige head. Aromas of roast, pine, floral notes, light chocolate. Tastes of roasty notes, chocolate, pine, floral hops. Medium body with a dry finish. Nicely hidden alcohol.

Can. Pours black off white head. Nose/taste of pine, resin, roast chocolate, coffee and earthy chocolate. Medium body.

Draught @ One Mile House, New York Pours pitch black with a smooth brown head. Aroma of fresh grassy hops, roasty malts, licorice and fruits. Taste is smooth, fruity and really hoppy with some roastiness, resin, licorice and citrus. Finish is smooth, hoppy and grassy with some licorice, resin and grass. Heavy, but tasty black IPA.

half growler shared by dmac and none for a half wit that stopped by and exited early-tight tan-black. A-resin, dk malt-roast. T-juicy rein/spice hop bite, dk malt-roast, some alcohol heat.
