Our Weizenbock is a pale, golden color, and like a bottom-fermented bock, has a high starting gravity and high alcohol content. The smooth, malty sweetness of a Weizenbock is balanced with clove, honey and fruit-like flavors. A touch of honey is also perceivable in the nose to produce a unique and complex aroma. It has a medium to full body and mouthfeel. The wheat adds a subtle tartness, which makes for quite a quenching and refreshing beer.

750mL bottle, batch 1, drunk 8/20/22. Clear, caramel-blonde. Medium-sized, dark beige head showing moderate retention. Yet again, no oxidation. Pretty nuts given that I was less than studious about cellaring it (warm, vertical). But there's certainly a shit ton of cellar must. Like going down to an unfinished stone basement and licking the floor. Outside of that, there's still a rich maltiness showing caramel-honey and rich wheat. No alcohol or flaw. Soft and malty, high attenuation, no doubt increased with age. No oxidation, not even much vanilla, with soft wheat, strong caramel and rich honey. No alcohol or flaw. Way, way past its prime, obviously, but a real testament to the absolute stunning quality of brewing by Skip and Co. back in the day.

Bottle split at RB Best awards dinner, thanks to Bobby, 30/01/16. Orange golden with a minimal off white covering. Nose is papery, oxidised tones, grains, rich fruit. Taste comprises darker fruits, caramel, grains, corn. Medium bodied, moderate carbonation, semi drying close. Fun to try but past its best ... could have been worse though!

Bottle shared at Ratebeer awards show. 30/01/2016. 2001 vintage. Many thanks to Bobby. A light orange amber coloured pour with no head. Aroma is aged sweet malts, toffee, mint and apple cake. Flavour is composed of woody, aged, dusty, stale malts, toffee, mint and musty. Palate is sweet and viscoud, medium bodied, . Maybe a little too much age.

’01 Bottle shared by torino at RBWG: Poured an orange with very little bubble head. Aroma was light soggy cardboard and malts. Obviously the taste had fallen way off but, even though it was light an oxidized the taste was malty to its core. I’m sure this one was amazing in its prime.

[1/30/16] Bottle sample at the Encomium bottle share, after RateBeer Best awards ceremony at Hyatt Vineyard Creek Hotel in Santa Rosa. Thanks everyone who shared bottles! Hazy orange, flat. Aroma of malt, cookies, some fruits, caramel, oxidation. Sweet, a bit of cardboard, grapes.

Bottle thanks to torino. Pours a hazy copper with small beige head that diminishes to nothing. Lots of oxidation on the nose and wet cardboard. Medium mouth, oxidation, bready malt, boozy, didnt hold up well.

Bottle, thanks Bobby! Vintage 2001. Light hazy amber liquid with minimal white head. Aroma of raw sugar, raisins, port wine, dried fruit and oak. Taste is light to medium sweet and light bitter with notes of port wine, raisins, tobacco and raw sugar. Full bodied with low carbonation. Quite rotten.

2001 bottle thanks to torino. Dark brown murky appearance with a thin tan head. Aroma has light banana, caramel, chocolate, and chocolate. Low carbonation. Pretty good drinking dessert beer. OK but well past its prime.

750 bottle @RBSG shared by EDA-pours a thin off white head and gold color. Aroma is spice, sweet medium malt-caramel. Taste is spice hops, sweet medium malt-caramel.
