(Previously labeled Persimmon Lambic). Persimmon was the first sour beer we brewed to use a fruit from a native North American species of flora, the persimmon, which is also a popular Midwestern delicacy. Persimmon is a fruited sour ale where the distinct characteristics of American persimmons are melded with a mildly tart base of sour ale. Fresh aromas of persimmon, pear and peaches accompany the light straw color. Lactic tanginess, field flavors, and dry fruits create a refreshing and experiential taste. The finish is very dry, with lingering persimmon flavor.

(Old description) The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Thx! to kermis. 750 ml. bottle sampled @ “Dean’s sticky Bomb Shelter” Tasting. GUSHER. Very hazy milky lemon appearance with no head. Nose is sour aspirin, sour puckering lactic, aspirin, sour orange,… Taste is hugely sour puckering lactic acid, sour lemonade bacteria, vinegar, citrus acid, very basic one note sourness, the sourness is almost comical, very much Vitamin C, aspirin & lemonade, no complexity. Puckering. Not getting the fruit really, I could get maybe orange but persimmon, not really. Body is puckering & lemonade. Fun on its own terms, easily least favorite of the ones tried so far, lacks fruit character (or at least the one that the bottle promises) & the sourness is almost comical if not entirely so. Fun enough if you like super sour USA sours.

Bottle shared. Pours very hazy pale yellow with a ring white head. Aroma of light barnyard funk, aspirin, heavy lactic and orange. Flavour is light sweet and heavy burning sour. Light medium bodied with light carbonation.

750 ml bottle, Batch 3.10, Bottled 2/25/14. Brought this to a pizza place that is BYOB. Pours a hazy yellowish color without much head or lace. Fruity aroma that gets fairly sour. Taste is puckeringly sour. Wow, didn't expect that much sourness here. Too much for me. Lacks balance, just a sour bomb. Vinegar fans will probably love it though.
