Le Terroir is a french term meaning ‘of the earth’ and is frequently used to reference the natural, environmental conditions that affect beer. So it is with our Wood Cellar and the foeders in which Le Terroir is created. These oak barrels combine nature and craftsmanship to age our sour beer in varying temperatures, humidity and vibrations. Coupled with dry-hopping using fruit-forward and experimental hops, Le Terroir is a beer that rewards differently every time you experience it.

650ml bomber. Hazy orange pour, big white head. Aroma is funk, citrusy, and fruity. Lemon zest, wet hay, wet grass, candied orange peel, and some light earthiness. Nice mouth feel, soft carb. Sour and funkiness abound in the end. Loads of lemony citrus goodness, and some strong funk sourness. Excellent quaff.

$5 tap night @Sideways Dallas. Stemless. Dark copper honey, frothy, sticky, opaque pour. Lemon honey & tea nose, heavy on the lemon. Sweet n sour lemon, oily orange, tequila, long island iced tea flavors, beautifully fruity hops, English Breakfast tea texture, a bit of salt, lime finish, faintest oxidation. Weak carb, thin, extra sharp, medium acid, way hotter feels than the abv. This was great. Pretty different from the bottle.

Bottle C&C. Copper pour with a small white head that recedes to a fine film. The aroma is medium in strength with funky fruit, wood and something medicinal. The taste is sour grapes, mangoes and other indistinct fruits. The palate is smooth and even. Finishes dry and a bit acidic sharp. Overall: Decent Sour.

(Bottle) Amber colour with frothy, off-white head. Fruity, hoppy, sourish nose with notes of lemon, grapefruit, barnyard, wood, unripe peaches and hints of dry white wine. Fruity, hoppy taste with grapefruit, lemon, pineapple, mango, peaches, barnyard, wood, white wine and a tart finish with a mild citric bitterness. More than medium body, with a slight sweetness. Tart and hoppy, not very bitter and not really complex or refined, but quite tasty and refreshing. Very nice.
