Our 6th beer in our 'Limited Edition' series (also our 64th batch): Summer vacation is in full swing in Japan, with people of all ages spending their free time at summer festivals, shopping at the mall, or enjoying the weather at the beach. While the busy beer season in Japan means we here at Kyoto Brewing Co. can't shut down the brewhouse to go tanning at the ocean, we still try to have our share of fun during the hot summer months. One of the most enjoyable methods is experimenting with new hops that arrived at the brewery.

The perfect time to do this is in between versions of our Kimagure Series, a hoppy pale ale using American Ale yeast that changes with the season, as there is often space in our fermenters until the next season comes. Over the next few months you will see a large variety of hoppy beers using American Ale yeast. While our house yeast is Belgian, the neutral character of the American yeast allows us to learn more about the nuances of different varieties of hops.

The first release in this series of hoppy beers will be featuring Mosaic, a relatively new hop exploding with tropical and fruity flavors. Since its release this hop has taken the IPA world by storm and its popularity has meant that it doesn't find its way to Japan very easily. Using connections and calling in favors from friends, we were able to acquire a small stock of Mosaic for 2016 and will be using it periodically throughout the year in limited release beers.

We also decided to feature something else with this beer, our assistant brewer Yasunori Namioka. Since joining Kyoto Brewing Co. in October 2015, "Yasu" as we call him has been working hard to learn as much as he can about brewing and the industry in Japan before opening his own brewery in Nara in the near future. While head brewer Chris writes most of the recipes and then asks Yasu for his input, with this beer we decided to flip the table and let Yasu take the lead in creating the recipe. The result is a highly aromatic, easy drinking IPA with just enough malt backbone to support the heavy load of hops.

About the naming: Within Tokumei Kibou (or "name withheld by request"), the main hop that characterizes the beer was mosaic. In Japan, "mozaiku" ("mosaic" in katakana) is used to describe the pixelation of images used to hide the identity of a person. As you read the name of the beer, you may have thought "what does this name mean!?" In a similar way, we felt people could pick up the beer, try it and wonder "what hop is this!?". Rather than giving a name that will give you a preconception of what you'll experience, we thought you may enjoy more drinking the beer while pondering the many different images and characters that these hops can conjure.
