A study in blending.

After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.

As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Bottled. Reddish-brown colour with a small off-white head. Aroma is citrus, spruce, some wine, wood and some mild toffeeish notes. Flavour is red wine, some sour wood, citrus, mild toasted, toffeeish and some slight funky notes. Dry palate.

Bottle. Dark ruby color with small beige head. Wine, candies, wood, bayrnard. Taste, red wine, wood, coconuts, funk, alcohol.Good.

Taster from tap at Lajbah, Ljubljana. Murky dark reddish brown, red tint, small tan head. Aroma is complex yeasty, barrel and fruity. Dark fruit and red fruit at first, dark cherry soaked in brandy, red wine, wood, some tobacco and glue. Very complex flavour, stronger acids, dark fruit such as blackberry or blueberry. Other than that, hints of: yeast, wood, leaves, dark fruit jam, glue. Very funky with a strong wild character. Wine-like, slick mouthfeel. Alcohol hidden. Dry finish, not just the acid, also wood presence. Puckering. Lingering, occupying. Dominating. Almost unbelievable.

Half in Doghouse. Reddish brown with a thin off white head. Aroma is oak, vinegar, fruit. Flavour is sour fruit with plenty of smoky whisky aftertaste. Sublime

Aw man. Yes. YES. Tart and fruity but the woody, whisky taste is there in perfect balance. Lovely stuff.

On keg at the Hanging Bat. Appearance - deep brown with orange chinks. Neat lacy head. Nose - red wine vinegar. Wood. Taste - wow, that is properly sour. Dry apple, in fact a bit like barrel fermented cider. Palate - tangy and medium bodied. Tangy finish. Overall - good. Authentic.

Rødbrun klar med lavt beige skum. Lukter røde sure bær, trevirke og bæreddik. Sur smak, noe bærsødme, trevirke og vanilje.
